Light as feather tofu chocolate mousse



Summer is here and with the heat, especially in Hong Kong, your appetite just makes you crave lighter foods. As much as I love chocolate lava cakes, it’s more of a dessert for the winter for me as it's too hot and heavy during the summer when I'm craving chocolate! Instead, I turn to this light, airy tofu chocolate mousse!


I was introduced to this chocolatey mousse by a colleague during my internship. Since then, I have never looked back. I did, however, find this tofu chocolate mousse recipe on As Easy As Apple Pie, so that must have been my colleagues’ source of inspiration!


For most individuals, dessert is a source of pleasure and indulgence. However, what if I told you that you could also pack some protein into your dessert to help you meet your daily requirements as an athlete? This easy tofu chocolate mousse can be made in just 15 minutes (with a total time of 45 minutes). If you thought the short amount of time is convenient, wait until I tell you that you only need two to three ingredients, depending on the type of chocolate you use!


In this recipe, the two main ingredients you’ll need are chocolate and soft/silken tofu. Melt the chocolate and blend it together with the soft tofu, and there you have it, your tofu chocolate mousse - a perfect dessert after lunch or dinner to hit that sweet spot.


Time: 45 mins, serves 2


Ingredients

  • 1 package of soft tofu (~350g)

  • 100g your choice of chocolate (dark, semi-sweet, milk chocolate) - I used semi-sweet

  • 2 tbsp maple syrup (optional/to taste if you use dark or semi-sweet)

Directions

  1. Melt the chocolate in a microwave or double boiler, making sure to not burn or allow any water to touch the chocolate

  2. Let the chocolate cool until room temperature

  3. In a blender, blend the tofu until smooth consistency, and add maple syrup and melted chocolate, once it has cooled. Blend for another minute or so

  4. Split the mixture into two ramekins and refrigerate for 30 minutes or so.

  5. Serve with berries if desired

One serving of this tofu chocolate mousse can pack up to 10g of protein, perfect to satisfy chocolate cravings and fill you up for a little while! Let me know what you think once you’ve made this dessert! You can also show it off and tag me on Instagram (@claudiacheng.rd)!
